The first course was a wahu, it was very citrus oriented. I drank every drop of it. I forget all that is in it. 
The second was a mackerel dish, with a horseradish focused flavor. But, there were other notes of flavor that popped out, the green apple and cream. You just kept circling around those flavors. The first mind blowing course, Duck Confit Cassoulet. You could decipher each lovely flavor at different moments. It was dense and earthy. This was a very memorable course, and portioned just right. Any more and it would have overwhelmed. Then came the gnocchi. It just melted in the mouth. It was cheesy and the pancetta just added a salty touch to it. The bread crumbs added some texture at times. 

The Wild Blue Catfish was next. And I am not a seafood/fish kind of person. But, this was a nice sized piece of fish. The variety of flavors abounded again. The fish was flaky and expertly cooked. It was delicate.fa136e57392093479095a5a40f033715
