                 Root Down during my last visit to Denver but never made it because of the two and a half hour wait .. So this time I made reservations and was able to get a table a little bit more quickly. Even so, the service was pretty slow and mediocre. I'm sure the staff is swamped (it was very busy, even late on a Sunday night) but it was still frustrating to have to wait so long for our drink order and then our drinks. Also, our server forgot a part of our food order (we never mentioned it to her because by the time the food came out we were tired and full from the rest of our meal, anyway). The drink was alright .. a pretty standard specialty drink. The food was delicious. It was really creative and had lots of flavor. I got the veggie sliders and my girlfriend got the fish. We both cleaned our plates! Also, the fries are good (I won't say "amazing" because I don't want to give a false build up... BUT they were also devoured!) I would love to give this place 5 stars because I love so much about it (ambience, location, menu, food) but the service really was just frustratingly underwhelming. Again, it just seemed like they were too busy for their staff to be able to handle. Our waitress was pretty wonderful otherwise. I'd go back, but if I lived in Denver I'd be sure to time it right :) As a visitor, my #1 recommendation is to make a reservation. This place was packed and by the grace of god, a table in the outdoor bar section just opened up and the restaurant host suggested we pop out their, because they have the full menu as inside. Great suggestion...it was going to be an almost 2 hour wait. I had the Tuscan Red Spinach & Kale salad with Tofu and my daughter had the Sweet Potato "Falafel" (which STOLE THE SHOW). We split the Veggie Burger Sliders. Every single bite was perfection. Do NOT miss this place if you ever swing through Denver, it is in a very up and coming neighborhood and the food is an explosion of taste in every vegan bite. One small 'gotcha' is you must ask for the plant-based option or otherwise they will bring you the meat, unless of course it has the word veggie or tofu in the title. After heavily researching my restaurant options in Denver, despite being there to sight see for a day, I finally decided to have dinner at Root Down. Now, this was a huge decision because I only had 1 dinner meal in Denver and I wanted it to be good! I booked on Opentable and imagine my surprise when I saw they had a Root Down in the Denver Airport. Apparently my research skills aren't quite so detailed. The restaurant itself is really cute, valet is available even though I feel there is tons of free neighborhood street parking if you look for even a few minutes. It was practically empty at 5:30pm except for the bar which was packed for Happy Hour, pretty great deals! They serve gluten free items but are not strictly gluten free or vegetarian as Yelp may indicate. We ended up ordering a few things, most of which were average but one that stood out as one of my *best-EVER* dishes, a huge achievement when you talk to a Yelper. First the * Complimentary Bread: Not impressed. Dense and a bit too hard verging on stale. 56 Hour Beef Ribs ($29) - 3 STARS: Polenta, Crispy Sunchokes, Swiss Chard , Smoked Shiitake Mushrooms & Horseradish Gremolata. Sounded amazing but I felt it wasn't that tender *gasp* an
